Some nights call for lasagna… but not the time commitment. This OG Lasagna Soup delivers everything you love about the classic — rich tomato flavor, savory sausage, tender noodles, and cozy vibes — all in one pot.

By starting with OG Bloody Mary Mix, you build instant depth and seasoning into the broth, so the soup tastes slow-simmered and intentional without needing a long ingredient list. Broken lasagna noodles cook directly in the pot, soaking up flavor, while kale adds just enough freshness to balance everything out.

OG Lasagna Soup

Ingredients

  • 2 Tbsp olive oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 lb Italian sausage

  • 1 (32 oz) bottle OG Bloody Mary Mix

  • 2 cups water

  • 8 oz lasagna noodles, broken into pieces

  • 1 bunch Tuscan kale, chopped

Optional Toppings
Ricotta, grated Parmesan, fresh basil

This is a very hearty, stew-like soup — closer to “spoonable lasagna” than brothy soup.

If you want it…

  • More soup-like:
    Add 1–2 additional cups of water or broth after the noodles cook, adjusting to your preference.

  • Extra creamy:
    Add ½–1 cup ricotta or a splash of cream at the end.

Instructions

  1. Build the base
    Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 3 minutes, until softened.

  2. Add garlic & sausage
    Stir in garlic and cook for 30 seconds until fragrant. Add Italian sausage and cook until browned, breaking it up as it cooks.

  3. Add the broth
    Pour in OG Bloody Mary Mix and water. Stir well and bring to a gentle boil.

  4. Cook the noodles
    Add broken lasagna noodles and cook until tender, about 10–12 minutes, stirring occasionally so they don’t stick.

  5. Finish with greens
    Stir in chopped kale and cook for 2–3 minutes, until wilted.

  6. Serve
    Ladle into bowls and finish with ricotta, Parmesan, or fresh basil if desired.
