Comfort food doesn’t have to be heavy — and this OG Quinoa Caprese Bake is proof. It’s warm, melty, and satisfying, but still feels light enough for a weeknight dinner or a make-ahead lunch.

The secret is starting with flavor from the very first step. By cooking quinoa directly in OG Bloody Mary Mix, you build depth without adding extra seasoning or fuss. From there, it’s all about simple, familiar ingredients: mozzarella, parmesan, juicy tomatoes, and fresh basil.

This is the kind of dish that works just as well fresh from the oven as it does reheated the next day — which is exactly why we keep coming back to it.

Recipe: OG Quinoa Caprese Bake

Ingredients

  • 3 cups OG Bloody Mary Mix, divided

  • 1 cup dry quinoa

  • ⅓ cup grated parmesan cheese

  • 1 cup shredded mozzarella cheese, divided

  • 1 cup cherry tomatoes, halved

  • Fresh basil, for garnish

Instructions

  1. Preheat the oven
    Preheat oven to 350°F.

  2. Cook the quinoa
    Prepare quinoa according to package directions, using 2 cups OG Bloody Mary Mix instead of water.

  3. Build the sauce
    In a small saucepan, heat the remaining 1 cup OG mix over medium heat. Stir in the parmesan cheese until melted and smooth.

  4. Combine
    Remove from heat and stir in the cooked quinoa, half of the mozzarella, and half of the cherry tomatoes.

  5. Assemble
    Lightly spray a 9×9 baking dish. Pour the quinoa mixture into the dish and spread evenly.

  6. Top it off
    Sprinkle with remaining mozzarella and tomatoes.

  7. Bake
    Bake for 15 minutes, then switch to broil for 2 minutes to get the cheese lightly golden and bubbly.

  8. Finish & serve
    Remove from oven and garnish with fresh basil before serving.
